Ingredients
- 10-12 sticks of white Asparagus
- 1 medium size potato
- 1 fresh green chili/ red chilly, chopped
- 1 tsp urad dal
- 1/2 tsp mustard
- 1/2 tsp channa dal
- 10-12 curry leaves/kadi patta
- a pinch of turmeric/haldi
- 1 tbsp oil
- 3-4 tbsp fresh grated coconut/kokos raspeln
- 1/2 tsp cumin /jeera powder
- salt as required
How to Prepare ?
- Rinse, peel and chop the Asparagus into small pieces.Peel and chop the potato too.
- Transfer the chopped veggies into a cooking vessel .Add very little water , turmeric powder , pinch of salt add little oil and cook for 5 mins . This shouldn't be overcooked .
- Heat the oil in a pan , add mustard seeds , urad dal and channa dal
- Fry till the mustard seed pops out , now add curry leaves and green chilly. ( be careful ...make sure that you don't burn these !! )
- Now add cooked asparagus and potatoes , sprinkle remaining salt and stir
- cover and let it cook for a 5-6 minutes
- sprinkle some water if required if the moisture dries in the pan.
- Now add coconut , jeera/cumin powder and give a stir.Switch off the flame.
- Before adding the coconut, if there is water in the pan, then dry it by simmering on an open flame for a few minutes.
- This goes well with Rice/Roti/Chapati.
Note:
If you want this dry curry to be more spicy , you can also add red chilly powder before you add coconut.
