Anjoora and Karjoora Burfi along with dry fruit man from Prameela's kitchen!!
Ingredients:
10-12 Dried figs
5-7 Dates 3-4 tsp Sugar (optional , this has to be added if the figs are not too sweet)
1-2 tbsp Ghee
1 tsp cardamom powder
1/2 tbsp chopped cashew nuts
1/2 tbsp chopped pecan nuts (you can use the nuts of your choice like pista, badam etc)
How to Prepare?
- Boil dried figs and dates together along with little water in a cooking vessel for about 5-10 mins. Drain them and keep it aside. ( Don't throw the drained water)
- After it cools down , make a puree out of it by adding little water (you can use the same drained water).
- Heat 1/2 tbsp ghee in a pan and roast all the nuts and keep them aside.
- Now to the same pan add 1 tbsp of ghee and add the date-fig puree. Keep the flame in medium and cook. Stir continuously for 20-25 mins .
- Now check for the sweetness , if required add 2-3 tsp of sugar.
- Now add roasted nuts and cardamom powder and mix it well . Keep stirring well so that it will not get burnt at the bottom. You should stir until it will start to leave the sides of the pan . It will form one single big lump at the end and you can see the ghee coming out of the lump. To get into this stage totally it took 35 mins for me.
- Grease the tray with little ghee and spread evenly .
- cut into pieces of your desired shape after it cools down .
Instead of cutting into diamond shapes , you can make tiny laddus and give it to kids . Its very nutritious .. :-)
