"Correct combination/proportion of salty,sour,spice and sweet makes any dish delicious ". I feel this is one of the secrets of cooking.
Combining basic Indian spice (red chilly),salt,sour(puli/tamarind) and sweet(jaggery) with rice turns into a Tamarind Rice !!!!
Ingredients :
2 cups of cooked rice ( don't cook too much , each grain should be separate)
1 teaspoon urad dal
1 teaspoon channa dal
1/2 teaspoon mustard seeds
1/2 teaspoon turmeric powder
1 teaspoon red chilly powder
1 teaspoon of tamarind paste
1/2 tablespoon of grated jagerry /sugar
10-15 curry leaves
25-30 ground nut /peanuts
1 tablespoon of chopped coriander leaves (optional)
salt to taste
2-3 tablespoon of cooking oil
How To Prepare?
- Mix red chilly powder , jagerry , tamarind , salt , turmeric powder in a mixing bowl and keep the masala mix ready. (Add water say about 1/4 cup)
- In a large pan/kadai dry roast the peanuts and transfer them into a different bowl.
- Keep the flame in medium and prepare the seasoning .To the same pan , add cooking oil , urad dal , channa dal and mustard seeds fry for few secs . After the mustard seeds pops out , add curry leaves , peanuts and prepared masala mix.Let it boil for 8-10 mins.
- Add the rice and Switch off the flame. Mix it well to make sure rice has got all the masala. Serve hot with curd.
Alternate :
Instead of red chilly powder you can use dry red chilies which has to be added along with other seasoning ingredients.
