Ingredients :
4 tbsp grated Jaggery
1 tbsp ghee
1/2 tbsp raisins
1/2 tbsp cashew nuts
200-250 ml medium thick coconut milk
250-300 ml water ( this may vary as it depends on Rava/Khus khus we use, adjust accordingly)
pinch of salt
How To Prepare ?
- In a large kadai/pan , heat ghee and fry cashews till they become golden brown , after that add raisins on top. Fry for 3-4 secs and add rava on top of cashew-raisin mixture. Fry the mixture for about 3-4 mins in a medium flame. Don't over fry as we will be cooking the Rava anyways in later stage.
- Now transfer this mixture to another bowl and keep it aside .
- To the same pan, add grated jaggery and water and bring it to boil. Don't add too much of water.Let it boil for 3-4 mins.
- Now add fried mixture (rava plus cashew plus raisin) and bring it to a boil.Let it boil for 7-8 mins so that sooji gets cooked completely. If you feel its becoming very thick you can add little water to maintain the consistency .
- Now add cardamom powder , pinch of salt and coconut milk and mix well. Just boil for one minute and switch off the flame.
- Garnish with your favorite dry fruit before you serve :-)
