Bored of eating same atta/oats/all purpose flour cookies??. Well I have one new recipe for you guys. Buckwheat flour cookies!!. Initially I was thinking Buckwheat is one of the varieties of wheat. No, that's not correct. Buckwheat is neither related to wheat nor a grain. It is actually a fruit seed. Buckwheat is very nutritious. It is a very good source of manganese ,copper,magnesium, fiber and phosphorus.

These cookies are very healthy and have very different taste.Green cardamom adds a special flavor to the cookie, black pepper spices up my recipe and brown sugar plays a magical role here.

Ingredients :
1 cup buckwheat flour (around 100 gms)
1/2 cup salted butter
1/2 cup brown sugar(for grinding) + 2 tsp brown sugar(for topping)
2-3 tsp all purpose flour
2-3 tsp all purpose flour
4 green cardamom
1 tsp black pepper
1 tbsp finely chopped cashews
1 tsp black pepper

2 teaspoon of cold milk if required
1/2 tsp baking powder
1/2 tsp baking powder
How to Prepare?
- Preheat the oven to 180 degree C
- Cut the butter into small cubes and keep it aside.
- Prepare the spice powder ...Grind cardamom and black pepper into fine powder.
- Mix buckwheat flour, all purpose flour, salt, baking powder and prepared spice powder well in a bowl and keep it ready.
- Grind brown sugar into fine powder.
- In a mixing bowl , combine powdered brown sugar and butter. Use fingers to mix it well until butter melts and blends well with the sugar.
- Now add flour mixture little by little and prepare a soft dough. I have used 2 tsp all purpose flour in this recipe, because it binds the ingredients well and supports the dough. If you feel your dough is not well combined at the end, add one more tsp of maida/all purpose flour and mix well.If you feel your mixture very dry then add 1-2 tsp of milk and make it soft.
- Refrigerate the dough for about 15 mins.
- Meanwhile chop the cashew nuts and keep it ready.
- Now dust the board/area with little flour where you will flatten the dough .Flat the dough into 1/2 inch thickness evenly. (As we are going to cut the cookies into square shape ,we will have to make one big square/oval when we flatten it)
- Now sprinkle 2 tsp of brown sugar (not powdered) on top and chopped cashews and run a chapathi roller only once so that toppings get set nicely on top. After that Using knife cut into cookies of square shape.

- Slowly remove the cookies using knife or hand and place on the baking sheet .
- Bake in a preheated oven for 15 mins at 180 degree C only. You should bake until bottom side and edge of cookie starts changing the color. Dough itself is light brown in color, so after you bake it will be on the darker side unlike other cookies.After 15 mins , turn one cookie and check the color. ( Please do not turn all the cookies) If its not yet done , keep it for 5 more mins and check again. It varies from oven to oven . In my oven it took only 15 mins.
- Remove cookies from the oven and store it in a airtight container after it cools down.
- Regarding my measurement , you can choose a cup of any size. I usually take a cup of small size when I try any recipe for the first time :-).
