Ingredients:
1 cup wheat flour ( I have tried aashirvaad atta brand and wheizen mehl type 1050 both)
1/2 cup sugar 1/2-3/4 cup ghee
1 tsp cardamom powder
1 tbsp chopped cashew nuts
How To Prepare ?
- In a large thick bottomed pan heat 1 tbsp of ghee. Add wheat flour and roast in a low/medium flame.
- You should stop roasting when you get a nice aroma.Another way of checking is, it will start becoming light brown at the bottom. It took around 15-17 mins for me.
- After roasted nicely, transfer the roasted mixture to a large mixing bowl.
- Now heat 1 tsp of ghee in the same pan and roast chopped cashew nuts until it becomes golden brown.Switch off the flame.Keep the roasted cashews aside.
- Powder the sugar in a mixer and add it to the roasted wheat flour. Mix nicely. (If you are confident enough, mix everything at the end !!)
- Now add 1/4 cup of ghee and cardamom powder to the mixture.Mix well using a spatula. Add more ghee as required and mix. You should get the mixture into a right consistency where you can make laddus out of it.
- Its time to soil your hands...:-) . Start preparing laddus. You have to be little quicker here as you have to finish off everything before the mixture becomes cold. Garnish each laddu with 2-3 roasted cashews on top.
Notes:
- Instead of cashews you can choose your favorite dry fruit like raisins, pistachio etc.
- Exact quantity of the ghee required for the recipe depends on the wheat flour we use. Add ghee little by little and mix.If you are able to make laddus(roundels) you can stop adding ghee.If you want a shiny texture then add 1-2 tbsp of ghee more and make laddus. It is always good to use adequate ghee, o.w it will break after sometime.
