10-12 sticks of green Asparagus
1 green chili/ red chilly, chopped
1 tsp urad dal
1/2 tsp mustard
10-12 curry leaves/kadi patta
a pinch of turmeric/haldi
1 tbsp oil
3-4 tbsp fresh grated coconut/kokos raspeln
salt as required
1/4 tsp jeera powder/cumin powder
How to Prepare ?
Note/Variation:- rinse, peel and chop the green Asparagus into small pieces. You needn't peel completely unlike white asparagus. Just chop off the woody ends and trim away the spiky leaves.
- heat the oil in a pan , add mustard seeds , urad dal .
- fry till the mustard seed pops out , now add curry leaves and green chilly. ( be careful ...make sure that you don't burn these !! )
- Now add chopped green asparagus , sprinkle salt , turmeric powder and stir
- cover and let it cook for a 5-10 minutes.
- sprinkle some water if required if the moisture dries in the pan.
- keep on checking during intervals and sprinkle water whenever required.
- when asparagus cooked well, add coconut and jeera powder followed by nice stir.
- before adding the coconut, if there is water in the pan, then dry it by simmering on an open flame for a few minutes.
- This goes well with Rice and Rasam.
- You can add 3-4 shallots (chopped) or 1 tbsp of finely chopped onion on top of seasoning. Fry for 3-4 mins and then add chopped asparagus.
Awesome
