This is a traditional recipe from Tamil Nadu. This snack is prepared during the festival of Krishna Janmastami and offered to Lord Krishna. Recipe looks easy but it takes lot of time. I can promise you its worth making at home these delicious uppu seedais.
Soft dough is prepared using roasted rice flour, urad dal/black gram flour, salt, butter, red chilly powder and asafoetida. Marble size balls will be prepared using this dough and deep fried in the late stage.
I was searching for new gokulastami recipes and I found here. Intent was to feed my little Krishna who loves fried snack and wants something hard to munch. :-)
Serve these seedais with hot tea/coffee.
Here we go with the recipe ...
Ingredients :
2 cups - Rice Flour
3 tsp - Urad Dal/Black gram flour
2 tbsp - butter
2 tbsp - grated coconut
1 tsp - Chilly powder
1/4 tsp - Hing/asafoetida
Salt as per the taste
Enough Oil for deep frying
How To Prepare ?
- Dry Roast the urad dal (may be 4-5 tsp of urad dal) and keep it aside.Once it is completely cools down, Grind it into a smooth powder. Sieve it nicely. Now grind the urad dal crystals which have not ground properly. Sieve it again and take out 3 tsp of finest urad dal powder. We need finest powder of urad dal for this recipe, Otherwise you may end up bursting of your seedais while frying :-( Be Careful
- Regarding Rice flour , either you can buy from the market or give the rice to mill and get it powdered. All we need is fine rice powder.Dry roast the rice flour till it becomes hot to touch.
- Now in a large mixing bowl , add in roasted rice flour, urad dal powder,salt,butter, coconut, asafoetida and red chilly powder. Mix it well using hands. Now add water little by little to make a soft dough. Don't add too much of water at one go.
- Start heating the oil in kadai/pan for deep frying.
- Mean while, grease your palms with little oil and start preparing the small balls for the first batch ( make the balls of size marble).
- Once the oil is hot enough for frying , turn the heat to low/medium. Now carefully drop balls one by one in a oil .(you have to decide on number of balls as per your quantity of oil and size of kadai/pan, don't overcrowd while frying)
- Keep stirring the balls using a spoon to fry them evenly until they become golden brown. This step is also very important as you should fry them in medium/low heat to make sure they cooked evenly and inside well.Once all the seedais are golden brown take out form oil and place them in a kitchen tissue.
- Repeat the above two steps and Fry them in batches.
- After seedais cool down completely , store them in airtight container.
